Ascension received a gold medal in the 2021 Australian Gin Awards announced 30 Sept in the Contemporary Gin Class which we think is a hell of an achievement for a tiny distillery going for less than a year. The gold medal sticker may take a while to get here so we will send it out to you separately if it's not on the bottle.

Macedonian Juniper, Grapefruit Peel, Lemon Thyme, Mandarina Bavaria Hops, White Pepper, Black Pepper, Nutmeg, Almonds, Cinnamon Sticks, Cardamom, Liquorice, Coriander, Angelica root and a secret one.
Batch 36 was grain fermented September 2021, distilled 19th October 2021 and bottled 14th November, and will continue to develop flavour in the bottle for the next 3-6 months (even after you open it). It may develop a light haze if stored in a cold environment which is the botanical oils showing. However, it will clear when warm (but haze will definitely happen once you add ice or tonic to Ascension or our other gins). We think this is a good thing as it shows the the absence of chill filtering, plus the heavy botanical load - which provides flavour - that goes into our gin. We use 90 grams of botanicals per litre of alcohol, the industry average for non-craft distilleries is around 30-40 grams per litre.
This batch has been distilled four times and went through 20 vapour infusion extraction cycles. It might not make any difference, but we also used Antipodes water in the extraction process instead of filtered water. It could make the gin just that little bit smoother.
As usual, the pure gin was diluted with carbon neutral Antipodes water to achieve 46% ABV.
BTW there are about 3 kilograms of Gladfield barley and 1,000 hours of sunshine required to fill each grain to glass Gin bottle.
Pair with Fever Tree Tonic Refreshingly Light for a lower calorie drink. Or you can enjoy with a few lumps of ice.

Won gold in Australia so must be good! It's got grapefruit on the nose and then Lucie will have to write the rest as it's her palate and recipe creation that got us here...
