Summary

This is not your everyday Gin! The combination of key ingredients, Juniper, Saffron, Pink Peppercorns, Rosemary flowers, and Lemonade Lemon Peel, then barrel aged, makes for a very sophisticated drink. It starts off as a gin and ends up as a smokey whisky.

The barrel we used is a 5-litre cask that has been used for our whisky making for the last three years and prior to that for Bourbon. The whisky is made from Gladfield heavily smoked peat barley, water and yeast and nothing else. It is aged in the barrel for 12 months, which because of its small size, is equivalent to 12 years in a big barrel (see photo). We then aged the Gin in this particular barrel for 3 weeks - that's all that was needed to give this Gin its distinctive aroma and taste.

The Saffron was sourced from Kiwi Saffron in the deep south and the Pink Peppercorn have been harvested from the Peruvian pepper tree. The Rosemary Flowers come from our own rosemary bush. And the Lemonade Lemons were gifted to us from friends (humans and greyhounds).

Botanicals

Macedonian Juniper, Saffron, Pink Peppercorns, Rosemary Flowers, Angelica, Cassia Bark, Liquorice, Poppy Seeds, Cardamon, Nutmeg, dried Lemonade Lemon Zest, Almonds and one secret ingredient.

Distillation Notes

This batch has been distilled four times and went through 20 vapour infusion extraction cycles. Final distillation was 09/01/22 and then aged in the barrel for three weeks and was further integrated in a glass container. It might not make any difference, but we also used Antipodes water in the extraction process instead of filtered water. It could make the gin just that little bit smoother.

As usual, the pure gin was diluted with carbon neutral Antipodes water to achieve 46% ABV.

 

Stewart's tasting notes:

Sorry about this but you may only drink it straight or one cube of ice. More like you would drink a whiskey. Tonic just destroys the delicateness of it. 

Lucie's tasting notes:

A very special gin. In your nose you will initially get juniper, with a hint of nectar from the rosemary flowers and berry from the pink pepper corns, followed by the peatiness of the whisky barrel.

Upon your first sip, you will get juniper, nectar, the berries, just the right amount of lemonade lemon peel and you will have just enough time to think "but where's the saffron?" before it will hit you! The peatiness will follow and you will find your taste buds play with saffron, whisky and berries.

Btw. I think it is the perfect digéstif with or without ice, but it also works with a neutral, light tonic such as Fever Tree refreshingly light.
