A fresh and light impression of juniper in your nose, accompanied by subtle grapefruit and hop notes. Soft and smooth on the palate with a long finish. The grapefruit and hop marry beautifully with the pepperiness of the juniper.

Botanicals
Macedonian Juniper, Wild Grapefruit Peel, Lemon Thyme, Mandarina Bavaria Hops, White Pepper, Black Pepper, Nutmeg, Almonds, Cinnamon Sticks, Cardamom, Liquorice, Coriander, Angelica root and a secret one.
Distillation Notes
This batch was grain fermented and distilled four times and then rested for a minimum of three weeks prior to bottling. It will continue to develop flavour in the bottle over the next 3-6 months (even after you open it). It will (almost certainly) develop a light haze if stored in a cold environment which is the botanical oils showing. However, it will clear when warm (but haze will definitely happen once you add ice or tonic to Ascension or our other gins). We think this is a good thing as it shows the the absence of chill filtering, plus the heavy botanical load - which provides flavour - that goes into our gin. We use 90 grams of botanicals per litre of alcohol, the industry average for non-craft distilleries is around 30-40 grams per litre.
As usual, the pure gin was also diluted with carbon neutral Antipodes water to achieve 46% ABV.
BTW there are about 3 kilograms of Gladfield barley and 1,000 hours of sunshine required to fill each grain to glass Gin bottle. Plus one Grapefruit!
Pair with Fever Tree Tonic Refreshingly Light for a lower calorie drink. Or you can enjoy with a few lumps of ice.
