Our first ever batch was released November 2025 and sold out in a week. Possibly because it was good, possibly because only 25 bottles were for sale - either way we will take it.

Batch 2 has been made with the same process as Batch 1 with the exception that it has been distilled and aged 100% in Northland. Possibly Northland’s only commercial whisky.

Provenance

Crafted from a mash bill of 66% Gladfield Smoked Barley and 34% Gladfield Distillers Barley, fermented with Saf Spirits M-1 Whiskey Yeast. Aged for 24 months in a 20L virgin Hungarian oak barrel at 63% ABV, then cut to 46% ABV with pure Antipodes water and bottled in the signature 700ml Saverglass Cognac bottle. A small cask with a big impact—yielding a whisky of remarkable concentration and character.

For this Whisky we continuously topped up the barrel with Antipodes water to ensure that all the Whisky maintained contact with the oak. We believe this has resulted in an even smoother whisky. The whisky started at 63% ABV and finished at 49% ABV which indicates how much was lost to Angles Share. The 49% ABV was then further cut to 46% ABV on bottling.

Tasting notes

Nose

Rich, warm and aromatic, with honeyed sweetness, clove, orange peel and fragrant spice. Beneath the sweetness, delicate notes of sandalwood and warmed pine resin add depth and intrigue, inviting you into a world of comforting winter aromas.

Palate

Full-bodied yet beautifully rounded, with layers of honeyed sweetness, rich dried fruit and warming oak spice. Notes of panforte, star anise and allspice unfold alongside the distinctive character of Hungarian oak. A gentle thread of peat smoke weaves through the palate, adding depth and complexity without overpowering the sweeter notes. As the whisky develops, a soft creaminess from the barley brings balance and elegance.

Finish

Long, warm and beautifully textured. The sweetness of dried fruit and honey gradually gives way to warming oak spice and delicate lingering peat smoke. Smooth yet distinctive, the finish is rich, rounded and deeply satisfying.

No colouring added. Not chill filtered. Some sediment may form in the bottle over time.
